Tresind Studio**

Full disclosure: I not only a) work here but also b) tried an early version of the degustation in September. The menu has changed a few times but is now in its final version.

While reminiscing, Chef Himanshu and I realized I have been visiting Studio since its first season and incarnation on SZR six years ago. I’ve written about Tresind Studio several times (you can find some of my additional thoughts here and here).

Now that I’m part of the team (sorry, you can’t stop me from shouting that fact to the world at every opportunity), I get to see more of the BTS than a regular visitor, and, for the record, it’s fascinating! I’m not going to give any trade secrets away, but I will say that I’m fascinated by how much goes into the finalization of a season/tasting menu. Even after my original visit on a Thursday, changes were made to the Saturday group.
