TakaHisa
Find my original visit to Takahisa here. While I’ve been very fortunate to attend a number of meals and collaborations at Takahisa, I had no idea what I was in for on a recent visit. This particular collaboration featured the culinary genius of Chef Haruka from Oniku Karyu*, one of the premiere Wagyu masters of Japan, who joined the talented home team for an exceptionally memorable meal. I had some of the smallest noodles ever — the technique! — and a truly special beef consomme (served in a “cup” of ice). Everything remains in exceptional harmony at Takahisa, and this visit was no different. Even with guest chefs, it’s an understated, seamless culinary adventure that I always feel lucky to be part of. Much like visits to Tresind Studio, I always learn about a new product, protein, or geography I have heretofore never heard of.
