I always look forward to seeing what incredible culinary creations of Chef Himanshu and his team, and our recent visit was no exception. In a menu combining old and new, my latest favorites include the Puran poli, beautifully crafted and balanced with a stunning sour lentil broth. Another new entry that hit for me was the galouti kofta, with its (properly) pickled kohlrabi and quince curry. It might not like sound like this dish should work, but it does (and it doesn’t hurt that the presentation drew legitimate ‘wows’ from the table).

Constructively, I will say the current wine/beverage pairing needs work, as it is currently overloaded to the point that we had stacked glasses throu…
