Ossiano* x Kaviari
There are some busy days in Dubai, and a recent Wednesday was one of them. With multiple invitations and a bit of a debaucherous time in Belgrade, I thought my best choice might be just staying home. Fortunately, I accepted the invitation from Chef Gregoire for the Kaviari x Ossiano collaboration dinner. It was a fantastic evening with a champagne pairing from Danijela and one of the most talented women I know as my date.
Given Gregoire’s seafood-forward menus, the use of caviar was seamlessly integrated into several new dishes (which I expect to see in the upcoming new menu). While the first was our favorite — a surprisingly complicated and delicious salmon sphere — the Kaviari team was also generous in giving us bumps of caviar to try (yes, that’s a technical term).
