We’d experienced some local highs (Restaurant Lee and Restaurant Fotografiska), but the end of our visit to Estonia was capped magnificently at NOA Chef’s Hall. I’ll admit — freely — that I knew very little about Estonian cuisine going into this trip and even less about some of their top restaurants.
Located slightly out of town on an inlet of Tallinn Bay is NOA, which includes the Chef’s Hall (fine dining) and a more casual approach, the restaurant. Much like Tresind/Tresind Studio in Dubai, this approach maximizes space, deliveries, etc. The Chef’s Hall only recently reopened after COVID times and complications closed it. I consider our group lucky to have the chance to dine at this exceptional restaurant.
While perhaps not at the levels of Hisa Franko, which were fresh in my mind, I can say that I enjoyed this meal better than my experiences at either Elkano or Azurmendi. It’s clear that Chef Tonis and his team know their way around plating unique concepts, and, in their refurbished …
