I was lucky enough to try Ana Ros’s food at Tresind Studio visiting Dubai in early 2021 for a collaboration and first experienced a version of her Rosa di Gorizia, which I fondly remember. Thus, when an invite arrived to fly me to Slovenia and hang out with Ana and her team and dine at her restaurant, I immediately canceled my plans and said yes.
Upon arrival, we got the ‘full’ experience — that is, we were able to spend two nights at Hiša Franko. I’ve been fortunate to have been invited to numerous restaurants globally, but this was a very well-run press trip, highlighted by the degustation. In addition to our time at the venue, we also met some of Ana’s farmers, winemakers and really just had a lot of chill-out time with her, including her two children and the family pets.
