I visited Spectrum a few years ago, in 2017, when I was just beginning my journey as a food writer, and the team was just as lovely then as they were in March 2023. For context, I texted Chef Sidney late on a Friday, and he was kind enough to give me a seat at his restaurant that evening.
Met warmly at the door, the team at the Waldorf Astoria Amsterdam remains at the top of their game in global hospitality. Taking the short trip downstairs to Spectrum, I note the interior has changed slightly from my previous visit — just a smart refresh, but the layout is generally the same. At the garden level, with snow gently falling in mid-March, I am seated for one of the first bookings for dinner service. Given my body clock is 3 hours ahead, this is fine for me and allows extra time to chat with the team, including the front-of-the-house manager, Cas, who was a delight throughout the evening.
