After Chef Gregoire’s departure from Ossiano in late 2024, the restaurant sat empty, or at least without a captain (please allow for a sea-related analogy here, as the restaurant is mostly underwater), for nearly a year. In the culinary world, there were whispers about numerous chefs who had ‘auditioned’ at award-winning Ossiano. This is where I will add my two cents (not that you asked). Given the proximity to FZN, I truly believe Kerzner should’ve leaned HEAVILY into a different direction — you know, one that isn’t a white dude. As I’ll continue to say, I like white dudes; many of my friends are white guys, I’m even married to one, but they’ve had a lot of time in the culinary scene. Now, if I were the powers that be at Atlantis, I would’ve hired a regional woman who specialized in seafood. I have no idea if Chef Tala was approached, but that would’ve been my #1 pick. Unfortunately, I am not the Queen of Atlantis, and so, enter Chef Rémy Marquignon, a Frenchman.
